Yummy —and healthier— Flapjacks

So many of you have asked for my flapjack recipe. Pretty simple actually. I took an easy pancake recipe and played around with substitutions. Play around with your own recipes and share them especially if you’re a baking whiz! I’d love to hear your thoughts on how I can improve mine and yet keep them healthy!


Protein Pancakes

Makes: +- 6-8 pancakes

4 scoops of Evox Lean Pro (Vanilla)
1/2 Cup Ground Oats** (See note below) [120ml/40g] 1/4 Cup Ground Flax** (Linseed) [+- 30g/60ml] 1/4 Cup Gluten Free Flour [40g/60ml] 2 tsp Baking Powder
1 Large Egg
250ml Woolworths Fat Free Milk (of course you can use whichever brand you prefer)
1/4 Cup Woolworths Fat Free Cottage Cheese [+- 60ml/50g] 1 tbsp Flax Seed Oil (Dischem) or Coconut Oil***

These are rough calculations using My Fitness Pal

119 Calories
4.6g Fat
9.4g Carbs
9.2g Protein

For those of you still getting into the clean eating you may not like the texture/taste of the above recipe. Try this:

Yummy Pancakes

Makes: around 6 pancakes

4 scoops Evox Lean Pro (Vanilla)
1 Cup Gluten Free Flour
1 Egg
250ml Fat Free Milk
2 tsp Baking Powder
1 tbsp Flax Seed Oil

180 Calories
3.8g Fat
25.5g Carbs
9.9g Protein

** I grind my oats and flax in a coffee grinder, see pics below. It cost less than R300 and definitely worth every cent.
*** Caloric value calculated on flaxseed oil not coconut oil
