‘Cos A Burger Can Be Healthy

Warren and I have been trying to include Paleo Diet elements into our current eating plan. I’ll write a post on the Paleo diet soon as I’ve read a lot of conflicting reports on its structure and benefits. But in a nutshell, Paleo is the eating plan of choice for CrossFitters and this is what it entails:

This reminds me of the diet I was on when I was gluten intolerant. The only exception being that I ate a WHOLE lot of potatoes! I don’t know how I stayed skinny eating all those potato chips and crisps LOL! I enjoy a good burger and I decided to replace the roll with cos lettuce leaves (cos burgers can be healthy ha ha ha)…So here are burgers I made sans the wheat rolls.

Version 1: using Woolworths Lean Burgers (ready made)

Ingredients:

Woolies Lean Burger Patties
Cos Lettuce

Guacamole:
1 1/2 Avo
4 Cherry tomatoes
1/2 Onion (finely chopped)
1/2 tsp crushed garlic
Dash of lemon juice
Some chopped parsley
Salt
Pepper

Place all ingredients for guacamole in a blender. If you prefer a chunkier version you can mash the avo with a fork and finely chop the other ingredients. You can also add some chilli if you prefer a spicier guacamole.

Fry burger patties with mushrooms

Place 2-3 cos lettuce leaves on your plate

Spread some guacamole on the lettuce leaves

Place burger patty on lettuce leaves and top with mushrooms

If you’re making a double burger add the additional patty on top and add extra guacamole

Place another cos lettuce leaf on top et voila!

Version 2: Homemade Burger Patties using Woolworths Extra Lean Mince

Ingredients:
Burgers
Woolies extra lean mince
Salt & Pepper to taste
Herbs to taste e.g parsley, thyme
Medium sweet potato finely grated
Onion finely chopped

Rosti
2 medium potatoes grated
Salt
2 tbsp Coconut Oil

Sweet Potato Chips/Fries
2 medium sweet potatoes chopped
Salt
2 tbsp Coconut Oil

Grate sweet potatoes

Add into mince mixture

Add onions and spices

Mix through with your hands

Roll into balls and flatten

Fry without oil if possible

In the meanwhile: Season and fry Rosti in coconut oil, flatten and press together. I like mine super crispy!

Chop potato into fries, coat with coconut oil and place in oven tray, bake at 180 deg celcius until ready. Grill until crispy should you wish.

Place burgers on rosti with a side salad and some avo or you can add the fries instead!
